Simple & Delicious Pasta with zesty Ricotta

This pasta sauce is so quick and easy to make! You can make it while the pasta is cooking, so everything will be ready in less than 15 minutes! How great is that? Perfect meal for a busy midweek dinner, or for a nice picnic!

I love to use ricotta, it gives loads of creaminess and keeps the pasta tasty and fresh, perfect for hot summer days! Enjoy!

Simple & Delicious Pasta with zesty Ricotta

Serves: 2 Prep Time: Cooking Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 250g ricotta
  • zest of 1 bio lemon
  • parmigiano freshly grated
  • salt and pepper to taste
  • Extra virgin olive oil
  • 160g pasta of choice

Instructions

  1. Place a big pot of water to boil for the pasta.
  2. Once the pasta is in, grate the lemon zest into a large bowl.
  3. Add the ricotta in and mix with a spoon.
  4. Add some pasta cooking water to make it creamier. Make sure it stays pretty thick as the pasta will dilute it further.
  5. Add a generous drop of olive oil and mix.
  6. Add salt and pepper to taste.
  7. Once the pasta is ready, transfer to the bowl with the sauce.
  8. Mix well, adjust seasoning and cover generously with freshly grated cheese before serving!

Notes
