Today I am taking you to Campania, more precisely to Sorrento, famous for its sunny coastline, the juicy lemons and this dish of course!
It’s super comforting and rich because of the generous mozzarella that once melted it pairs perfectly with the tomatoes and the gnocchi. It’s basically like a pizza with gnocchi as base! How amazing does that sound? 😀
I like to use mozzarella pearls because it’s easier, but any tasty mozzarella will do! The final (optional) sprinkle of ricotta salata gives the dish a nice twist, from the salty ricotta made with sheep’s milk. Alternatively, you can use some good old parmigiano to boost the flavor further.
This recipe is also perfect if you have some leftover, already made tomato sauce you don’t know how to use – and to be super quick and easy you can buy ready made gnocchi!
