Agretti (Monk’s beard) Nests with Fried Eggs

Have you heard or tried Agretti before? When I saw them at my favorite farmer’s market here in Amsterdam last week I couldn’t believe my eyes! They’re very common in Italy right now (season), and I’ve been missing them! So if you are around farmers markets, make sure to look out for them!

Also known as ‘Monk’s beard’, this grass-looking (almost like chives) vegetable is delicious and very nutritious! Filled with minerals and vitamins, they’re super quick to prepare. The easiest way is to boil them, then add some seasoning (salt, pepper, some lemon juice and olive oil will do the trick). Perfect for a quick & nourishing lunch idea!

Today I am showing this nice pairing with fried, sunny side up eggs where you can place the agretti to form a lovely nest for the egg. Make sure to have a lovely slice of tasty bread to go with it! 😉
