Yesterday was international Women’s day (8th March), so I thought about sharing an easy, delicious recipe that would match nicely with the mimosa, the flower that symbolizes this day! Did you know that in 1946, two activists fighting for equality of women suggested to celebrate the first Women’s Day after the war by offering branches of mimosa to other women as a sign of respect and support? Since then it’s customary to gift a branch of this strong and beautiful flower to women on this day.
But back to the cake 😉 you could say that this cake is made in two parts: the first one is about cooking the semolina in the milk. Then, once you get a nice, thick paste, you slowly add all the other ingredients. It’s easy and quick to assemble, then you just place it in the oven and cook it until dry inside, about 40-50 minutes. Because of the eggs it turns out to be quite rich. The lemon and poppy seeds give it that delicate, fresh flavor that makes it impossible to stop eating it!
