Delicious pan-roasted Jerusalem Artichokes

Looking for something light, seasonal and nourishing? Try these delicious pan roasted Jerusalem artichokes, also known as Topinambur!

This root vegetable is super healthy, it tastes just like artichokes and it’s super versatile! For instance, you can make a wonderful soup or simply add some fresh herbs and roast it to make a beautiful side dish like this one. Make the most of it while it’s in season!

You can easily swap the herbs with ones you prefer. About the skin, you can either keep it as I do (it gives it that extra hearty flavor) or you can peel it off for a cleaner presentation. As final touch, I like to dress mines with some good quality extra virgin olive oil for that extra acidic kick. So nice! Enjoy!
