Today I am sharing this light and super tasty quiche with a golden twist! The courgettes blend in perfectly in the creamy heart of the quiche made with ricotta, eggs and cheese. Then a dust of saffron as final touch for a nice flavorful change!
This recipe is quite versatile: not a fan of courgettes? Just swap them with something else like broccoli, aubergines or brussel sprouts!
A note about saffron: it’s best to use the powdered one because it’s so much more flavorful! Try to get your hands on it – you should find it in most well-stocked italian stores. Enjoy!
