XL Pumpkin Gnocchi in a buttery sauce

These XL gnocchi are the ultimate Autumn must-have! Their sweet pumpkin flavor matches perfectly with the rich buttery sauce, so get ready to be comforted like a warm blanket!
These gnocchi are quick and easy to make, especially if you have leftover pumpkin! In this case I used steamed pumpkin (a fancy way to say I microwaved it haha), without added flavors. Make sure to go for a sweet and flavorful variety of pumpkin, like the ones with an orange or a green skin. Another important thing is to make sure your pumpkin is quite dry before making it into a puree. That is to ensure the consistency of the batter is not too soft, which will end up in having your gnocchi falling apart during cooking, or having to add a lot of flour dampening the pumpkin flavor.
For this recipe I used two types of flour – ie all-purpose (or 00) and spelt. Spelt has more flavor and proteins, so that’s the added value for this recipe but I did not use too much as it’s quite flavorful and can overpower the pumpkin (which we do not want ;D). All that is to say you can experiment with different flours!
The final mixture will be quite thick and almost sticky, which is what you are looking for. I used a tablespoon to get the XL gnocchi, and I simply dumped the batter from the spoon into the pot of boiling water.
They will cook quite fast, and you know they will be ready once they start floating! Make sure to not add too many to the pot to avoid overcrowding the pot, which may result in them sticking together.
