Vegan and Light Apple Pastry

Autumn is the best time to dig into all apple-themed sweet creations. So here I am posting for you this super easy to assemble pastry that is delicious and healthy!

Just mix together a few ingredients, add them to the puff pastry and cook! It’s the simpler, vegan version of strudel, the long pastry filled with cinnamon-flavored apples that you can commonly find in Trentino-Alto Adige, or the south of Austria.

For this light version I like to use very little sugar and no butter – instead I use the apple+cinnamon jam from Dille&Kamille. Less fatty, but still sweet and delicious! In this version I also don’t use raisins nor pine nuts (present in the original Strudel) – but feel free to add them or to experiment with other nuts!

The apples: it’s important to use the best types to ensure balance of flavors: my go-to choices are golden delicious, granny smith or gala! Finally, for the pastry you can make it yourself, or use shortcrust instead of puff pastry, or buy one in a store to speed up the process! Enjoy! 😉
