Easy & Balanced Salad packed with Superfoods

This easy lunch salad is the ultimate nutritious meal, thanks to all the superfoods and the rich tahini dressing sauce.
It just takes minutes to assemble, and you can even cut times further if you pre-roast the potatoes and chickpeas beforehand. This salad is perfect as packed lunch, and can be prepared in advance. If you do that, make sure to add some lemon onto the avocado so that it won’t spoil (ie become black). And add the dressing sauce at the end 😉
What I really like about this salad, apart from giving so many nutrients, is that is very versatile. If you lack any of those ingredients, you can use something else! Make sure to still have a good source of carbs, fats, proteins and fibers at the end 😀
