Summer Rice with Shrimps & Stracciatella

Warm, summery weather calls for cold, stunning dishes! Like this one: beautiful black rice with shrimps, stracciatella and courgettes!

Seasonal, super rich and tasty – I love how the creaminess of the stracciatella complements the fresh and saltiness from the shrimps! Although I have to say the ultimate star is the rice! I got this black & wholemeal rice from the farmers’ market ZuiderMRKT – from Marco’s lista – top quality and super tasty italian produce! I love the concept of promoting small businesses, which is what he does! If you live in Amsterdam, go check the market or the website! 😀

The rice has just enough flavor to give its contribution to the dish without being too strong or too bland – the perfect base! Make sure to cook it until ‘al dente’ to keep a nice bite to it! It’s so versatile: what I tend to do is to cook a big batch and keep it in the fridge to use & mix it with whatever I feel like! I also had this beautiful yellow courgette so I decided to give it a healthy kick by adding it. Just cook it in a pan, without condiments, so that it won’t overpower the flavor from the stracciatella and shrimps. Enjoy!
