Simple and Soft Tigelle (mini flatbreads)

Today I am sharing a quick & easy recipe to make delicious Tigelle, the small & rounded flatbreads from Emilia Romagna!

This street food is very common in many areas of Emilia Romagna, especially near Modena. The original recipe uses bicarb of soda, water and salt. My version has milk and a bit of (vegan) butter. You can make the recipe dairy free by using lactose-free milk, or plant based milk! If you want to make a sweet version, just add a bit of sugar in the mix!

You will find them filled with delicious fresh cuts like Mortadella, or melted cheeses like Gorgonzola. You can definitely get creative and use them as you please! That’s the advantage: these breads are so soft, with a delicate taste which makes them the ideal vessel to many wonders! Remember to enjoy them when still warm! 😉
