Savory Muffins with Spinach, Feta & Sundried Tomatoes

These savory muffins are quick and easy to make, perfect as a snack at any time of the day! Packed with healthy and nutritious ingredients (loads of spinach, feta cheese and tomatoes), they are filling and delicious 🙂
For this recipe I use a lot of spinach which I pre-cook so that they do not take as much space. I then add feta as it’s a great combo with spinach, but feel free to add other cheeses! You ideally want something quite hard, but you can also try with cheeses that melt like Emmenthal or Gouda blocks. For a dairy free version, you can just omit the cheese and use a plant-based milk 🙂 they will still taste great!
For the sundried tomatoes, I used the ones stored in oil for extra flavor and moisture. You can use the dry ones or substitute them with roasted bell peppers for alternatives. If you prefer to add even more veggies (and proteins), you can add some peas and diced carrots.
For the flour mix, I always like to mix all-purpose with a more nutritious flour like spelt, to get more benefits and flavor out of it. Feel free to experiment with those mixes too!
