Broccoli and cauliflower are in season, and I love that once roasted they keep that nice crunchiness. Feel free to swap them with other vegetables through the year, or to omit one if you are not a fan! Feel free to also play around with the spice mix. I am a big fan of cumin, hence why I added more 😊and the cinnamon gives that extra sweetness that just works!
About the bulgur, I love it because it’s protein packed (12g every 100g) and so easy to make. You can substitute it with couscous, quinoa or even short pasta! Just make sure to choose something that will make you feel full! Lastly, for the cheese sauce, I use cottage cheese because it’s low in fat and high in protein. If you don’t like the consistency or the flavor, you can swap it with a flavorless yoghurt (I like the alpro plain, protein rich – which would make the dish vegan or lactose free!). Buon appetito!
