Because cauliflower is a superfood, I try to eat it often when it’s season. The problem is that I am not a super fan of its flavor ☹ so I am always looking for new ways to cook it! If you’re in for a more indulgent treat, check out my baked cauliflower in bechamel sauce 😉 (recipe here).
These healthy cakes are perfect for a quick lunch or as side. Luckily you can find cauliflower rice in all big supermarkets, making the process easier and quicker! I added chickpea flour for the extra protein boost but feel free to use any other type of flour! You can also experiment by adding other spices, like cumin. Still delicious! 😉
