These delicious cookies are the perfect treat to kick off autumn season and its star: pumpkin!
I am absolutely obsessed with it – in fact, it’s definitely one of my favorite foods! So when season comes, I try to make the most of it and get my hands on as many pumpkins as I can! Do you have a favorite? Mine is by far Mantovana (also known as Kabocha): it has a dark green shell, and the sweetest flavor ever. The best. In the upcoming weeks, you’ll notice quite some orange from my recipes 😉
Now, back to the cookies! They are super easy and quick to make – even quicker if you can use pumpkin that has been pre-cooked! A tip for pre-cooking: I usually cut the pumpkin into cubes and either microwave it (10 min covered at max power is usually enough), or roast it with very little oil and some seasonings (herbs) for savory dishes.
These cookies are vegan (I use flavorless oil, usually from peanut or sunflower seeds). They have a soft, rich heart and a crunchy, sweet shell. As final touch to make them even more irresistible, the orange zest – it goes so well with pumpkin! Let me know if you try them 😉
