Potato and Chickpea Frittata – Easy & Vegan!

This vegan, nutritious and easy frittata is the lighter, protein packed and dairy free alternative you’ve been waiting for! It’s also delicious to try even if you don’t have particular dietary requirements 😉

It’s so simple: without eggs, milk or cheese (typical in a frittata), the chickpea flour alone and a dash of spices are enough to make this side special and nourishing! For a richer version, you can add plant based unsweetened milk instead of water. You can also use a mix of normal and sweet potatoes! His version, to make it easier and cut some time, has pre-sliced potatoes but you can use fresh potatoes too! Same goes for the fresh herbs – if you prefer others rather than thyme, switch it up!
