Mini Polenta Cake with a Melting Cheese Heart

Looking for a small, easy yet indulgent appetizer? Try these mini polenta cakes, with a rich heart made of melted cheese. I mean, what is better than melted cheese? This is the savory version of the beloved lava cake with the melting chocolate heart ;D

It’s super easy and quick to make. For the polenta, make sure you use corn flour for instant polenta (ie, ready within seconds once you add it to the boiling water). I usually go for the fioretto type, finer grains for a smoother result. For the cheese, you can experiment for sure! As long a you choose something that melts well, and maintains a bit of body ie not something like mozzarella or string cheese – too liquid. Try for something like Emmenthal, fontina, gruyere, gouda and so on.

Lastly, if you want to prep more for a party or have some leftovers, you can prepare them ahead of time and bake them when needed. Third option is, if you have a microwave, to reheat the already baked ones to ensure the cheese melts. Enjoy!
