Winter is here – which means my need for healthy, nourishing and delicious soups is also here! This chickpea and leek soup is super quick to make, it’s packed with nutrients and it’s super creamy thanks to the cooking cream. Simply delicious!
The soup is very versatile: if you are not a huge fan of leeks, just add half of one. You can also add more veggies to the mix, and try different spices too (cumin works super well). You can also try with some herbs, like thyme or rosemary! Just add them at the end (finely chop the rosemary) and it’s done! If you want to try other amazing soups, click here for the complete list!
