Flan with Pumpkin and Mushrooms – Extra Soft & Rich!

My pumpkin saga is still on! Here I present you this lovely recipe of a pumpkin-flavored flan. Flan is a baked good that is known to be super soft and rich. This one is packed with eggs and freshly grated cheese, for extra flavor and depth. Just lovely.

It’s topped with beautiful chanterelle, my favorite mushroom! I was so happy when I saw them at the farmers market 😀

If you cannot find them, you can use other varieties – ideally something tasty like shiitake. For both the pumpkin flan and the mushrooms, feel free to add some fresh herbs for extra flavor, like thyme (flan) or parsley (mushrooms). To make it dairy free (since parmigiano does not have lactose), you can use a plant-based cream. Last note: if you are unable to apply the bain marie baking method, it is fine. Your flan will still be lovely, just not as soft. Enjoy!
