Easy summery healthy pasta

On a hot sunny day all I want is a cool, refreshing meal. If you feel the same, look no further! It makes the perfect lunchbox, picnic main, or lazy midweek dinner.

This pasta is super quick to make – you just prep the ingredients while the pasta cooks! 😊 you can use whichever pasta shape you want – but much better if it’s short! Day-after spaghetti tend to glue together.. you can also adjust the amounts of the ingredients: for example, I am not a huge fan of cucumber so I don’t put too much in it. Enjoy!
