Easy Mini Carrot Cakes

These cakes just take me back to my childhood, where sometimes I would get a Camilla for my afternoon snack (known as ‘merenda’ in italian): these little sweet snacks are bombs of flavor, where the carrot notes mix perfectly well with the orange and almond ones, creating this glorious, perfectly balanced mini cake that is made to impress your family and friends! You can serve them as a light dessert, or together with coffee or tea.

For the zest, as always remember to go for an organic/bio fruit as it will lack all harmful pesticides/etc. on the skin!
