Today I am sharing this super easy and healthy recipe for a veggie-packed mini souffle. The best part is that you can experiment with veggies of choice, or just use what you have in the fridge! This version is packed with broccoli with a bit of carrot and mushrooms – super healthy and tasty! 😊
To keep its consistency like a proper souffle – i.e. super light and moist like a cloud – it’s important to work the egg whites until you get stiff peaks. Then, very gently incorporate them into the main mix trying to not break the structure too much. You’ll love it!
