Easy & Delicious Pumpkin and Ricotta Quiche

As you may know I love pumpkin, so when it’s in season I try to eat it in as many ways as possible! This version is a lovely pumpkin mix to make a delicious, comforting quiche. If you want to be inspired by my other pumpkin recipes, just click on the search icon and type pumpkin!

This version is super easy and quick to prepare – I used store bought puff pastry and pre-cubed pumpkin. Perfect for a cozy, relaxing midweek dinner during these darker and cold days!

The ingredients complement each other’s and are quite delicate to make sure the pumpkin flavor prevails with its hint of sweetness. For the herbs, I love using either thyme or sage. You can also use rosemary, marjoram, or a mix! You can also taste the mix if you don’t mind the raw egg, and eventually adjust the seasoning. Lastly, for a vegetarian version, just omit the pancetta!
