Easy and Delicious Polenta Cakes

Today I am showing you this quick, easy and delicious polenta-based snack. They can also be used instead of bread for small ‘bruschette’ – you can cover them with anything from tomato sauce and mozzarella, to ham and cheese, to mushrooms. The list goes on indefinitely! But if you are a fan of polenta, this is for you!

You can find polenta flour (corn flour) at the supermarket (or even at Holland and Barrett!). If you want to add a twist or extra flavor, you can add some finely chopped fresh herbs, like thyme or rosemary.

If you keep them to eat at la later time, they will get quite hard – still tasty but I would recommend to enjoy them with a sauce to balance the dryness! Enjoy! 😀
