Courgettes, Ricotta & Pesto Pie – deliciously rich!

This easy and deliciously rich vegetarian pie is the ultimate comfort food you’ve been looking for! 😀 It’s perfect if you have leftovers of pesto and/or courgettes, because you will save time for preparation, and have zero food waste! Pretty handy 😉

For the pesto, anything green will work just fine! For this one in particular, I had some leftover parsley pesto which worked very well, as it added some richness (pesto) and freshness (parsley) to the pie.
To the courgettes, you add the ‘usual mix’ you would add to almost all savory pies, consisting of beaten egg, grated cheese, salt and pepper. To add some extra body, but lighter, I added some ricotta. The result is a very rich pie, healthy and nutritious. Perfect when served either hot & cold! (Yes summer days, you are finally coming!). If you want to add extra protein to it, you could try to use a firm tofu instead of the ricotta, or perhaps some cubed ham. Nothing too rich or flavorful, otherwise the end result might be a bit much. Enjoy! 😀
