Cold Tomato & Basil Pasta sauce

When it’s super hot outside, I usually don’t eat much and prefer cold dishes. This tomato & basil pasta sauce is perfect for being cold, nourishing, and super easy and quick to make! You just need a good-sized food processor and it will be ready within 10 minutes. This recipe makes a lot of sauce, so you can keep it in the fridge or even freeze it!

Because of the simplicity of the sauce, tasty and good quality ingredients are a must – including extra virgin olive oil! 😊 about the other ingredients:

The tomatoes: we call this variety perini: they are thin and long, and bright red. I found them in Ekoplaza and I am so happy! They’re used for this sauce because of their sweet and flavorful taste. Also, make sure to use freshly picked basil, ideally picked from a plat that same day to preserve the flavor!

I am not a super fan of raw garlic. For this reason, I leave the garlic cloves intact and eventually remove them after a couple of days, so that their flavor is mild. If you like, you can also use garlic paste, or blitz the cloves with the tomatoes!

The ideal pasta: because it’s a cold sauce, I would recommend dry pasta. The preferred pasta shape for me is linguine (pictured here). I personally prefer long pasta shapes, but you can also use short pastas like fusilli or farfalle!
