Today I am sharing this super easy & cheesy delight that is perfect as a nourishing side! These leek and potato cakes are super tasty thanks to the sweet leek and the cheese (you choose which one you prefer most – as long as it melts well!).
I use pre-cooked potatoes to cut times and have something ready within 30 minutes. How nice is that for a fuss-free midweek meal? 😀 you can also use raw potatoes – just boil them until soft and carefully mash them (with a fork or with the potato masher). I love to eat them with salad (pictured) but they also work very well as appetizer by themselves! Enjoy! 😀
