Winter is a season for comfort—warming meals, gentle routines, and reconnecting with the things (and people) that nourish us most. As we ease into the new year, I’m excited to invite you to a new series of pasta workshops in Amsterdam, each with its own unique shapes and seasonal sauces.

There’s something truly special about gathering in the kitchen when the world outside is cold and grey. Inside, the table glows with color, laughter, and the comforting aroma of something simmering on the stove. This year, I want to bring that magic to life in a new way: every winter pasta workshop will feature its own unique pasta shapes and seasonal sauces — no two classes the same.
Why the change? Over the years, I’ve seen how our best moments happen when we embrace what’s fresh, local, and in season. I want each workshop to be a true celebration of the winter harvest—from sweet root vegetables and hearty greens to fragrant herbs and the occasional surprise from my favorite local farm partners.
But this isn’t just about ingredients. It’s about giving returning guests a reason to come back again and again, each time learning a new shape, a new sauce, a new story. Maybe you’ll discover the art of hand-rolling orecchiette, or master a rustic pappardella paired with a walnut cream you never knew you loved. Perhaps you’ll find a new favorite in a vibrant beetroot sauce or a cozy pumpkin and sage pairing—each class designed to spark curiosity, creativity, and joy.

- 23 January 2026 – Let’s make farfalle & mafalde with seasonal sauces – a rich beef ragu’ and vegan broccoli pesto
- 27 February 2026 – Let’s make farfalle & stuffed caramelle, paired with a red cabbage sauce, nuts and cheese fondue & ricotta-stuffed caramelle with arrabbiata (spicy) sauce with pancetta
- 20 March 2026 – Stuffed pasta edition! Let’s make agnolotti with ricotta, topped with a sundried tomato & almond pesto, & classic tortellini (meat filling) in brodo
Each workshop features a new pasta shape and a seasonal sauce, so you can join again and again and always discover something new. The workshop format stays the same (full description here).
