Lemon-flavored Caprese cake – rich & summery!

You may have heard of torta Caprese (ie, cake from Capri) a rich, dark chocolate & almond-based cake. This is the ‘white’ version of it, because it has white chocolate and it’s flavored with lemons. Simply stunning and rich, it’s the perfect summery cake!
As this cake does not have flour (only ground almonds and corn starch), it’s also gluten free! This version is way more recent than the original dark chocolate one, in my opinion a bit lighter while it preserves the same unmistakable consistency: soft & rich inside, while crunchy on the outside.
The preparation of the cake batter is very simple – and if you also have a small stand mixer with blade attachment to ground the almonds and white chocolate, you will have your cake batter ready within minutes! Isn’t that great? 😀 you only have to remember to take out the butter from the fridge in advance (yes, forgotten myself to do so many times..).
In this version I used some home-made limoncello to give it an extra kick for the lemon flavoring – if you want an alcohol-free cake make sure to use more lemon zest, or some lemon juice! (I am not a fan of store-bought essences).
Lastly, if you have some edible flowers, like me you can use them to decorate your cake to give it a brighter and fresher look! Let me know your thoughts if you make it, I dare you to resist from getting a second slice 😉 buon appetito!
