Basil-infused Pannacotta

by Micaela Harrasser

This delicious and light pannacotta comes at the right time (yes, we are finally having some nice weather)! Indulge in this very special version, which has a soft basil taste added to the classic cream. So refreshing and delicious, perfect to start off the hot season!
For the basil, make sure to use organic/bio (so that it does not have pesticides). When you chop it, be gentle and try to not squeeze it too much otherwise you will release some bitterness from it.
It’s delicious by itself, but if you are looking for a fruit to pair it with, I would use strawberries 🙂 either as raw pieces, or as jam. You can prepare it in advance and store it in the fridge for a couple of days, so it’s perfect if you need a simple dessert for an occasion but would prefer to make it in advance!
Also, you can of course make a vegan version by using plant-based cream (I like the Alpro one) and agar-agar instead of gelatin sheets. And if you are not a fan of strawberries, how about raspberries? 😀 buon appetito!
