While it does take a few hours to rest, the dough is very easy to make (especially if you have a stand mixer). To get a spongy dough, make sure to wait until it doubles in size – this will take different amounts of time depending on the room temperature. So that will take less time with warmer temperatures, for example during summer months.
For the toppings, in this case I used mixed pickled vegetables from a lovely giardiniera (this is how we call pickled vegetables) – so that the sweet, vinegary sauce gives that extra flavorful kick 😉 feel free to use other toppings of choice, as well as spices.
