When I feel like I need something light, healthy and nourishing – and when it’s like 15 degrees outside – I always go for a soup. I love courgettes, and lucky me because now they are in season! This soup is my go-to for ‘dutch summer’ days 😉
The leek is so tasty and sweet that can replace a vegetable stock. If you want to use onions instead, you can but you might have to boost the flavor with about ½ vegetable cube stock. The sweet potato makes the soup lightly sweet, super tasty and definitely more filling. I don’t even feel the need to have my soup with bread! You can also use yellow potatoes if you have them at home, but then I would add a carrot to sweeten the dish (especially if the courgettes are not at their best).
Lastly, this lovely soup recipe is vegan – but if you are ok with cheese, it’s always nice to add some freshly grated cheese on top of your creation for that extra boost in taste 😉 I would use something like parmigiano or grana. Lastly, don’t forget to check my other soup recipes! Enjoy! 😀
