‘Empty the Fridge’ Vegetable Pie

If you are like me, then sometimes your eyes are ‘bigger than your stomach’ and you find yourself with a stuffed fridge and some vegetables that send you miserable looks haha.

What I do in these cases is to make a delicious pie containing a filling base of eggs, mixed with some freshly grated cheese, and all the vegetables I can find! Here I used a mix of mushrooms, kale, courgettes and sweet potatoes. Divine! You can season the veggies with the herbs you prefer. Just make sure to cook them before adding them to the filling – otherwise they won’t cook enough (the pastry cooks in no time). If you don’t want to use the pan, feel free to steam/microwave everything! This is what I often do with the ‘hard’ vegetables and starches like potatoes, carrots, broccoli, etc.

The best part is that once ready, you can store it and enjoy it for days to come in case you have a busy schedule! Let me know how it turns out, and which mix you went for! 😉
