Pumpkin season is not over yet – and it’s getting real cold out there! So I thought what a perfect time to share a pumpkin flavored, super spongy focaccia recipe!
This rustic recipe is very similar to my classic focaccia alla Genovese (here). The two main differences are the pureed pumpkin in the dough, and the bigger amount of dough used – meaning tall, spongy focaccia!
The pumpkin gives it a lovely flavor (make sure you use a flavorful one!), that rustic light orange color and extra softness at every bite!
You can use it as ‘bread’ to enjoy by itself (as side dish or during aperitif) or cut it in half and fill it with cheeses and cured meats. Either way, it will be utterly delicious!
